Mazuma Wasabi

History and origins of the wasabi business

10 years with Mazuma Wasabi - Hydroponic cultivation developed with the local community

In November 2014, we decided to enter the hydroponic cultivation business. We valued coexistence with local farmers in the market, and ultimately decided to try hydroponic cultivation of wasabi as a unique approach that differed from typical leafy vegetables.
At first, we didn't have any staff with specialized agricultural knowledge within the company, so we had to start by trial and error. However, with the cooperation of the agricultural cooperative and the chamber of commerce, we were able to meet experienced farmers and get the opportunity for practical training. Furthermore, we deepened our scientific knowledge by attending specialized lectures at the Faculty of Agriculture at Osaka Municipal University.
After a year of research and development, we succeeded in developing a hydroponic cultivation system. This approach differs from traditional soil cultivation, and we have established stable quality control and an efficient production system. Over a two-year period from 1 to 2016, we developed a hydroponic cultivation shelf optimized for wasabi growth.
In April 2022, we started a hydroponic cultivation business for "Mazuma Wasabi" in the building of Hii Elementary School in Hidaka Town, Wakayama Prefecture. The elementary school, which closed in March 4, was renovated into a place of relaxation for local residents, with the aim of revitalizing the area. Mazuma Wasabi is characterized by its rich aroma, strong spiciness, and long-lasting aftertaste. Its flavor, which differs from other wasabi varieties, makes it a dish that enhances dishes.
The initiative at Hii Elementary School is working hand in hand with the local community to provide high-quality wasabi using unique hydroponic cultivation techniques. With particular attention to temperature and water quality control, and through technological innovation through industry-academia-government collaboration, we are able to deliver the best tasting Mazuma wasabi.

Producers' thoughts - Mazuma Wasabi grown together with the local community

Producer's thoughts -
Mazuma Wasabi cultivated together with the local community

"Through Mazuma Wasabi, I want to convey the importance of the region and nature."

We grow Mazuma Wasabi, which is grown in Wakayama Prefecture.
This variety is considered to be the finest in terms of flavor, spiciness, and sweetness, even when compared to "Daruma" and "Shimane No. 3."
Because it is very labor-intensive, there are very few farmers nationwide who grow it, making it highly valuable. It is grown indoors in a clean environment using artificial light hydroponics without the use of pesticides.
Through wasabi, we would like to bring the blessings of nature to your table.
